If you are anything like me, you don’t have much time to cook. However, if you are trying to get fit and eat somewhat healthy, it’s best that you prepare your meals yourself. One of my favorite quick and easy healthy breakfast options is to make scrambled eggs with spinach and cayenne pepper. This is perfect for those days you have to go to work after an early morning workout.
1/2 cup of fresh baby spinach
1/2 cup of Egg Beaters Original
1/2 tsp of Cayenne Pepper
Healthy Breakfast Preparation:
All you need to do is out a 1/2 tbsp of low fat butter or olive oil in a skillet on medium to medium-high heat. Then add the fresh baby spinach until it start to get soft. A 1/2 a cup may look like a lot, but the spinach will shrink once softened. Then pour in a 1/2 a cup of egg beaters and either scramble eggs or make yourself an omlette. You can add a little garlic and salt for a bit a flavor.
This healthy breakfast combination also offers some great health benefits:
- Eggs: great source of protein and has numerous vitamins, including vitamin A, potassium and many B vitamins like folic acid, choline and biotin.
- Spinach: has dietary fiber, which aids in digestion, prevents constipation, maintains low blood sugar, and curbs overeating.
- Cayenne pepper: it is a well-known digestive aid. It i s also a known circulatory stimulant and increases the pulse of our lymphatic and digestive rhythms. Cayenne causes us to sweat, which is an important process of detoxification.
This healthy breakfast only takes me 5-10 minutes to cook. Some people may opt to use real eggs, but I chose egg beaters because it is low calorie and has no cholesterol and no fat. It is also much faster than cracking eggs open. You should try it too!
